May ’26 Meal Prep Recipe: Protein Pesto

- Ingredients:
- 1 cup fresh basil leaves
- 1/4 cup nonfat Greek yogurt
- 2 tablespoons low-fat cottage cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 clove garlic
- 1 tablespoon nutritional yeast (optional)
- 1 tablespoon water (adjust as needed for consistency)
- Salt and pepper to taste
- Directions:
- Blend Ingredients: In a blender or food processor, combine the basil leaves, Greek yogurt, cottage cheese, Parmesan cheese, lemon juice, garlic, and nutritional yeast.
- Adjust Consistency: Slowly add the water as needed to achieve your desired consistency. Blend until smooth.
