Dec ’25 Meal Prep Recipe: Perfect Tri-Tip

- Ingredients:
- 1 Tri-tip roast (~2 lbs)
- Organic extra virgin olive oil (~3 tbs)
- Salt
- Pepper
- 2 cloves garlic, crushed
- 2-3 sprigs fresh thyme
- 2 tablespoons butter
- Instructions:
- Rub olive oil on both sides of the tri-tip roast. Season generously with salt and pepper. Place in the fridge to dry brine for at least 2 hours.
- Preheat the oven to 225°F. Cook the roast in the oven until the internal temperature reaches 110°F.
- Heat a cast-iron pan over high heat. Sear the roast on both sides until a crust forms, reaching an internal temperature of 125°F. Remove the roast from the heat and let it rest.
- In the same pan, add butter, garlic, and thyme to make a flavorful sauce. Slice the tri-tip and drizzle with the garlic-thyme butter.
