Feb ’26 Meal Prep Recipe: High-Protein Baked Blueberry Oatmeal

- Ingredients:
- Rolled oats: 160g
- Low fat cottage cheese: 300g
- Egg whites: 120g
- Whole eggs: 2 large eggs
- Blueberries: 120g (fresh or frozen)
- Banana: 60g (ripe, mashed)
- Maple syrup: 30g
- Whole milk: 120ml
- Baking powder: 1 tsp
- Vanilla extract: 1 tsp
- Cinnamon: 1/2 tsp (optional)
- Pinch of salt
- Directions:
- Preheat oven to 350°F and grease a medium-sized baking dish (8×8-inch works well) or line with parchment paper.
- In a blender or food processor, combine the cottage cheese, egg whites, whole eggs, banana, milk, maple syrup, vanilla extract, cinnamon, and salt. Blend until smooth.
- In a mixing bowl, combine the oats, baking powder, and blueberries. Pour the blended wet mixture over the dry ingredients and mix well.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let it cool slightly before slicing.
