Jan ’26 Meal Prep Recipe: Pizza Spaghetti Squash Bake

- Ingredients:
- ~1200g raw spaghetti squash
- 400g lean ground beef
- 100g pepperoni slices
- 200g shredded mozzarella cheese
- 200g organic marinara sauce
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
- Instructions:
- Prepare the spaghetti squash:
- Preheat the oven to 400°F.
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Lightly salt the inside and place the halves cut-side down on a baking sheet lined with parchment paper.
- Roast for 35-40 minutes, or until the squash is tender and easily shredded into strands with a fork. Cool slightly, then scrape the flesh into strands.
- Cook the ground beef:
- In a large skillet, cook the lean ground beef over medium heat until browned and fully cooked. Season with Italian seasoning, garlic powder, onion powder, and salt and pepper to taste. Remove from heat.
- Assemble the dish:
- Lower oven temperature to 375°F.
- In a large mixing bowl, combine the cooked spaghetti squash strands, marinara sauce, cooked ground beef, and half of the mozzarella cheese (100g). Mix until evenly combined.
- Bake the dish:
- Spread the mixture evenly into a 9×13-inch baking dish. Sprinkle the remaining mozzarella cheese (100g) evenly over the top.
- Add turkey pepperoni slices on top if desired.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve: Let cool for 5 minutes before serving. Portion into 4 equal servings.
